Sheet Pan Chicken Fajitas
Ingredients
1 lb chicken breast, cut into bite-size pieces
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, sliced
2 tbsp olive oil
1 tbsp chili powder
1 tbsp cumin
1 tsp paprika
½ tsp onion powder
1 tsp black pepper
Flour/corn tortillas and/or rice if desired
Directions
Preheat oven to 400ËšF. On a baking sheet lined with parchment paper, place the chicken and pepper slices.
Drizzle olive oil and then sprinkle chili powder, cumin, paprika, onion powder, and black pepper over the chicken and peppers.
Bake for 10 minutes and then remove pan to stir the meat and vegetables before placing back in the oven to bake for another 5–10 minutes. Ensure that the chicken is thoroughly cooked, reaching an internal temperature of 165˚F.
If you would like to make everything extra crispy, broil on high for 2 minutes.
Pair with tortillas and/or rice for a delicious Mexican dinner.
