Pumpkin French Toast
Ingredients
4 slices of brioche bread
1 cup pumpkin puree
2 large eggs
1 cup milk
1 tsp vanilla extract
Ground cinnamon
Brown sugar (optional)
Butter or oil, for cooking
Maple syrup and powdered sugar, for serving (optional)
Directions
Combine pumpkin puree, eggs, and milk in a large bowl. Mix until smooth, then add vanilla extract, ground cinnamon, and brown sugar (if using), and stir again.
Preheat a large skillet or griddle over medium heat and coat with butter or cooking oil.
Dip each slice of bread into the pumpkin batter, coating each side completely.
Place the coated bread slices onto the hot skillet and cook on each side until golden brown. Add more butter or cooking oil between batches, as needed.
Plate and top with a drizzle of maple syrup and a sprinkle of powdered sugar (optional, or use other toppings). Enjoy!
