Ingredients
1 1/2 to 2 lbs of 80% lean ground beef
1 medium sweet yellow onion, diced or sliced
1 cup of sharp cheddar cheese, sliced or shredded
1/4 tsp salt
1/4 tsp black pepper
4 brioche buns
Your favorite BBQ sauce
Drizzle of olive oil
Directions
In a large skillet, drizzle olive oil and cook diced or sliced onions over medium heat for 8–10 minutes or until golden brown. Once cooked, remove and transfer to a plate.
Next, lay down a sheet of parchment paper on a flat surface and divide your beef into 8 equal portions and shape them into balls. Top with another sheet of parchment paper and use a flat-bottomed pan to press the beef into patties.
On half of the patties, top with 1/8 cup shredded cheese (or a few small slices), a tablespoon of the onions, and another 1/8 cup of cheese — making sure to leave a border around the patty. Top each with another thin patty and press the edges together, sealing well. Double check to make sure there are no holes — this is important so the cheese doesn’t leak out while cooking.
In the same large skillet, add a drizzle of olive oil and heat over medium heat. Add burgers to the pan, leaving space to flip them carefully. Cook for approximately 8 minutes before flipping, or until browned on one side. Once flipped, cook for another 5 minutes or until golden brown. Double check that they have reached an internal temperature of 155ËšF.
After cooking is done, assemble burgers on brioche buns with additional caramelized onions and BBQ sauce.
