Baja Chicken Wrap

Ingredients

  • 1 lb chicken breast
  • 2 limes, juiced
  • ¼ cup olive oil
  • 1 tsp cumin seeds
  • 1 tsp chili powder
  • 1 tsp black pepper
  • 4 cups shredded lettuce
  • ¼ cup ranch dressing (we recommend avocado ranch!)
  • 1 ½ cups avocado, diced
  • 4 large tortillas
  • 8 slices of Monterey or pepper jack cheese
  • 4 slices of bacon

Directions

  1. In a bowl, mix together the following ingredients for the chicken marinade: lime juice, olive oil, cumin seeds, chili powder, and black pepper. Allow the chicken to marinate for at least 30 minutes in the fridge. (Pro tip: poke holes in the chicken breasts with a fork for better marination).
  2. While the chicken marinates, bake (in the oven) or fry (in a skillet) the bacon strips. Dice the avocado.
  3. Once marinated, grill the chicken over high heat. Allow both sides to be thoroughly cooked and ensure that an internal temperature of 165°F is reached.
  4. After cooking, allow the chicken to cool and then slice thinly.
  5. Prepare each tortilla with two slices of Monterey/pepper jack cheese, covered by a layer of lettuce, a slice of bacon cut in two, about 4 oz of chicken, a drizzle of avocado ranch, and avocado.
  6. Wrap up the tortilla and finish it off by searing it in a skillet with olive oil over medium heat, allowing the tortilla to become golden brown and the cheese to melt inside.
  7. Slice in half and enjoy!
