Sante Fe Quesadillas

Ingredients

  • 1 (half) or 2 (full) whole wheat or flour tortillas
  • ¾ to 1 cup shredded Mexican cheese blend
  • ½ cup diced red pepper
  • ½ cup black beans
  • ½ cup whole kernel corn
  • 1 chicken breast, diced
  • ½ cup enchilada or taco sauce
  • Olive oil or cooking oil
  • Avocado/guacamole, sour cream, ranch (if desired, for side)

Directions

  1. Prepare the chicken breast by dicing it and placing it in a skillet. Cook over medium heat. While the chicken cooks, chop the red pepper.
  2. Once the chicken is cooked, add enchilada or taco sauce, red peppers, black beans, corn, and any other desired seasonings into the skillet. Let it simmer for a few minutes.
  3. In another skillet or flat pan, grease with olive oil or other cooking oil and place a tortilla on the pan. If making a half quesadilla, add the chicken and vegetable mixture and cheese onto half the tortilla and fold the other half over. If making a full quesadilla, spread the mixture and cheese over the entire tortilla and then cover with another tortilla.
  4. Using a spatula, cook over medium heat and flip to the other side once browned.
  5. Serve with guacamole, sour cream, or ranch on the side. Slice the quesadilla and enjoy!
