Loaded Smashed Potatoes
Ingredients
1 small bag of baby potatoes
1 cup of shredded cheese
4-6 slices of bacon/turkey bacon
Sour cream (if desired)
Chopped chives (if desired)
Directions
Preheat oven to 400˚F. While the oven preheats, thoroughly wash all baby potatoes and place them on a cooking sheet covered with parchment paper.
Once all potatoes are placed on the cooking sheet and the oven is preheated, place in the oven for 50 minutes to an hour.
During the last 20 minutes of baking, place bacon on another cooking sheet with parchment paper and cook.
After baking, use a fork to smash each potato. Then, chop up bacon into small pieces. Once each is smashed, cover the potatoes with shredded cheese and chopped up bacon. Place back in the oven for 5 minutes, allowing the cheese to melt.
Finally, top with sour cream and chopped chives, if desired, and serve as a delicious side or appetizer!
