Chocolate Peanut Butter Eggs

Try this healthier twist on one of your favorite candies!

Ingredients

  • 1 cup peanut butter
  • ⅓ cup coconut or almond flour
  • ¼ cup honey or maple syrup
  • 1 cup dark chocolate
  • ½ tablespoon coconut oil (optional)

Directions

  1. In a bowl, combine the peanut butter, flour, and syrup or honey. Mix until smooth.
  2. Shape the mixture into an egg or your favorite form.
  3. Heat the dark chocolate and optional coconut oil in a small pot over the stove until melted.
  4. Line a tray or plate with parchment paper to place the eggs on.
  5. Using two forks, dip and coat each peanut butter egg in the melted chocolate. Optionally, drizzle more chocolate on top as the coating sets.
  6. Refrigerate or freeze the eggs until ready to serve or eat.
